Genetics, Feed and Care Regimen
HighMont Beef® is what a nationally recognized Cardiologist calls the “Cardiac Cow” and what we call the “Buff Beef”. Our herd is born, raised and harvested right here in Northwest Montana the old fashioned way. Our cattle are naturally grass-fed on locally grown grass pasture and in off season locally raised grass/alfalfa hay. They are further given a specially designed diet of oats and ground flax seed to increase levels of Omega 6 & 3, an all natural high protein minerals and mountain spring water from our very own springs. They are raised in a chemical-free field environment and without growth hormones or antibiotics. They are raised at nature’s pace, not mans.
We personally walk among our cattle and handle them daily. Our cattle are kept calm and peaceful at all times in order to guarantee a stress free environment and are transported with the utmost of humane treatment. We dry age our beef for approximately 12 days to enhance tenderness and flavor. Our cattle are processed at a USDA licensed and inspected facility which together with our supervision guarantees the best HighMont Beef® for our own family, friends and customers.
With the endorsement from the Chief of Cardiology from a local regional hospital (see Endorsement Page) and after selling to the public through health food stores, hospitals and fine dining establishments, we are convinced that our customers who are in that group of heart and general health conscious consumers, now have the opportunity to enjoy an all natural, low fat, low cholesterol, tender and delicious beef.
Laboratory Test Results
Warren Analytical Laboratories, of Greeley Colorado conducted laboratory tests in 2006 of a composite of ten different cuts of HighMont Beef® which yielded the following relevant nutrition facts:
